What's For Lunch? Organic Kale Salad- Spectacular!

What's for lunch? Crisp Organic Kale Salad! 

Here's what you'll need! 
  • Finely Chopped Young Kale
  • Tomato
  • Thinly Sliced Cucumber
  • Drizzle of Hemp & Herb Dressing
  • Light Sprinkle of Parmesan
  • Sprinkle of Ground Flax & Pumpkin Seeds for Crunch!
  • Add Feta Cheese to beef it up a bit if you like! ;)

Benefits of these foods include Calcium from the Kale & antioxidants from the tomatoes- especially home grown!

Selecting Young Kale will ensure a better flavor. Young Kale are the smaller leaves, they are more delicate & less bitter.

There are digestive benefits from the Apple Cider Vinegar, Hemp oil & herbs in the dressing. Ground flax provides additional fiber & Pumpkin Seeds are naturally anti-parasitic (gets rid of parasites). It's delicious without the cheese but with it- downright spectacular! Happy Summer!

Apple Cider Vinegar & It's Relevance to Natural Health

Braggs Apple Cider Vinegar is a health food store staple and my preferred brand.  It's unfiltered, containing what is referred to as the "Mother" that contains healthy bacteria, enzymes and living food. Always look for the "Mother" in any Apple Cider Vinegar that you purchase and preferably buy an Organic variety. Among other benefits it is a fermented beverage which supports healthy bacteria in the intestines, supporting digestion.  

Many people use it with success to combat acid reflux.  Acid reflux isn't a condition of too much acid; it occurs when the stomach doesn't have enough acid when food enters the stomach.

The food sits in the stomach for too long without adequately produced acid.  It then passes partially digested into the small intestine.  Finally, the stomach gets around to producing acids but it's too late, the food has moved on! Too much acid produced in the stomach when there is no food in it, causes stomach upset, erosion of the lining of the stomach, and acids launching up into the esophagus (acid reflux). Food passing partially digested into the small intestine creates malabsorption of nutrients.  The small intestine should only be receiving digested food or "chyme" from the stomach.

Homemade Hemp Oil & Herb Dressing

There are more than a few ways to make homemade salad dressing.  You can keep it really simple and start with apple cider vinegar and hemp or flax oil.  I prefer flax oil because it has a nice profile of Omega Fatty Acids 3,6 and 9.  This is my personal favorite brand (Nutiva) and best price to buy it.  I use apple cider vinegar by Braggs.  There are several options out there for Apple Cider Vinegar but always look for a brand that says, "with the mother" on the label.  Sounds a little weird but it basically means that it's unfiltered and that it will contain strands of beneficial bacterias and enzymes, the "living" part of the venegar that makes it so beneficial to you.  This is great for anyone with digestive issues like acid reflux or indigestion of any kind too.
